Abstract

ASSESSMENT OF NUTRITIONAL, ANTI NUTRITIONAL AND ANTIOXIDANT PROPERTIES OF UNDERUTILISED LEAVES OF MORINGA OLIEFERA AND SOLANUM NIGRUM

ABSTRACT

The study was carried out with objectives to determine the nutritional, antinutritional composition and antioxidant activity of underutilized leaves Moringa olifera and Solanum nigrum. Chemical analysis for proximate contents of leaves was done by using the standard procedure of AOAC. Iron, calcium and Vitamin C contents were determined by Thiocyanate method (colometric), volumetric method and 2, 6-Dichlorophenol dye method respectively. Beta carotene content was analysed by the method given by Ranganna, 2001 while Polyphenol content and % radical scavenging activity were assessed by the Folin-Ciocalteu method and DPPH method respectively. In Moringa oliefera, the Moisture in fresh and dehydrated leaves was found to be 77.2% and 7.6% respectively while Ash content of fresh and dehydrated leaves varied from 1.9 to 10.1%. Carbohydrate content was found to be in the range of 8.4g to 38g and Protein content of leaves ranged between 8.5g to 23g. Fat content varied from 1.6g to 6g while Fiber content was found to be in the range from 0.8g to 11g. So far the micronutrients contents such as Iron, calcium, Vitamin C, Beta carotene are concerned, it was found to be in the range between 9.6mg to 31.8mg, 523mg to 1825 mg, 205mg to 48 mg, 6780μg to 35800μg respectively and energy ranged between 89.4kcal to 300kcal. In Solanum nigrum, Moisture in fresh and dehydrated leaves was found to be 59% and 9.7% respectively while Ash content of fresh and dehydrated leaves varied from 2.6 to 12.9%. Carbohydrate content was found to be in the range of 9.10g to 25.4g and Protein content of leaves ranged between 3.52g to 15.12g. Fat content varied from 0.14g to 3.98 while Fiber content was found to be in the range from 1.65g to 14.32g. So far the micronutrients contents such as Iron, calcium, Vitamin C, Beta carotene are concerned, it was found to be in the range between 13.04mg to 20.7mg, 410mg to 760mg, 25mg to 7.28 mg, 1.6μg to 2.7μg respectively and energy ranged between 58kcal to 264kcal.
