Abstract

EVALUATION OF FATTY ACID COMPOSITION OF THE SEED OIL OF SOME LEGUMINOSAE SPECIES FROM ARID ZONE OF RAJASTHAN

ABSTRACT

Seeds of 36 plant species belonging to leguminosae family from arid and semi arid zone of Rajasthan were investigated for physico-chemical properties and fatty acid composition. The fatty acid profile was obtained by using Thin layer chromatography, U.V. spectroscopy, I.R. spectroscopy and GLC techniques. The highest oil content was found in Pongamia pinnata (33.98%). The amount of palmitic, stearic, oleic, linoleic and linolenic acids in the seed oils showed a wide range. The percentages of unsaturated fatty acids in these seed oils were generally higher than saturated acids which make them suitable for human consumption. The highest amount of polyunsaturated fatty acids was reported in Medicago sativa (69.2%).
