EFFECT OF LEACHING ON POTASSIUM AND PHOSPHORUS REDUCTION IN NUTS AND SEEDS: A DIETARY STRATEGY FOR CKD MANAGEMENT"

ABSTRACT Chronic Kidney Disease (CKD) patients are prone to complications such as hyperkalemia and hyperphosphatemia due to the reduced ability of their kidneys to excrete excess potassium and phosphorus. Nuts and seeds, though rich in essential nutrients, are often limited in renal diets because of their high potassium and phosphorus content. This study aimed to estimate the levels of these minerals in commonly consumed nuts and seeds and to evaluate the effectiveness of a simple leaching process (soaking in water) in reducing their concentration. The objective was not only to analyze the potential of the leaching method in minimizing the risk of hyperkalemia and hyperphosphatemia but also to impart nutritional education about its importance to CKD patients. Fresh food samples were procured from local markets, and 100g of each was taken, washed thoroughly, andanalyzed for initial potassium and phosphorus content using values from the Indian Food Composition Tables (IFCT). The samples were then soaked in water for six hours, after which the potassium and phosphorus levels were measured again. The results showed a statistically significant reduction in both minerals after soaking (p < 0.05), confirming the effectiveness of the leaching process.
