MODERN ANALYTICAL TECHNIQUES USED IN AUTHENTICATION OF YEMENI SIDR HONEY

ABSTRACT Honey is a natural product is produced by honey bee from its stomach and secreted as saliva. There are many types of honey in Yemen but the famous and of high therapeutic value is Sidr honey. This research dealing with qualitative analysitical methods for identification and characterizing of Yemeni Sidr honey. Many authentication modern methods and measurements were included in this research as the physical methods; pH metry, pollen grains count, electrical conductivity, specific density,viscosity and crystallization properties were measured. This methods also included, the UV absorbance measurement. In addition, qualitative analysis of chemical constituents like vitamines, amino acids, carbohydrates were tested. More over the antibacterial activity of Yemeni Sidr honey was carried out. In this research many modern analytical techniques were used as UV-spectrophotometry, HPLC, Densitometry, viscometry, pH metry, conductometry and TLC to achieve this gaol of authentication of Yemeni Sidr honey and detection any adulteration.
