ABSTRACT The increasing interest in functional foods has led to an intensified focus on natural methods for enhancing health and wellness. This study investigates the formulation of gummies that incorporate Rosmarinus officinalis (rosemary) extract, a medicinal herb used for its strong antioxidant and anti-inflammatory effects. The main aim was to develop a stable, enjoyable, and effective gummy formulation that can deliver the health benefits of rosemary in a format that is appealing to consumers. Rosemary extract, which is abundant in bioactive compounds such as rosmarinic acid, carnosic acid, carnosol, and camphor, was incorporated into a gummy base using agar-agar powder as a natural, plant-derived gelling agent. The formulation was fine-tuned to achieve optimal taste, texture, and physicochemical stability. The resulting gummies were assessed for various parameters, including physical appearance, pH, friability, dissolution time, and stability. The assessment demonstrated satisfactory formulation consistency, structural integrity, and an appropriate dissolution profile, while preserving the anti-inflammatory properties of rosemary. This research underscores the potential of rosemary-infused gummies as a natural, convenient, and effective alternative dosage form, thereby contributing to the growing field of functional medicinal confections aimed at managing inflammation.
