CHOCOGRANATE: A NOVEL APPROACH TO ENHANCING CHOCOLATE'S NUTRITIONAL VALUE

ABSTRACT This study introduces an innovative chocolate product called chocogranate, crafted using a blend of cocoa powder, moringa powder, stevia sweetener, and natural pomegranate flavour, all combined in a smooth white chocolate base. The result is a unique, health-conscious treat that not only satisfies sweet cravings but also delivers functional benefits. The addition of moringa, known for its high nutritional value and antioxidant properties, enhances the health profile of the chocolate, while stevia offers a natural, zero-calorie sweetness, making it suitable even for those monitoring their sugar intake. When set at cool temperatures, the chocogranate develops a pleasing matte texture that adds to the overall sensory experience. Taste tests revealed that participants appreciated the balance between the earthy notes of moringa and the tangy-sweet hint of pomegranate, with the creamy white chocolate tying the Flavors together seamlessly.
