ABSTRACT Industrial and traditional (Soumbala) broths are very popular food products in West Africa, particularly in Burkina Faso, but their safety has not been fully established. The aim of the present study was to evaluate the effects of industrial and traditional (Soumbala) broths on NMRI mice liver and kidney function. Forty-five (45) males of four (4) weeks-old NMRI mice with an mean body weight of 22.10 ± 1.99 g were used. They were divided into (9) groups of five (05) animals. These animals were administered orally, daily for eight (8) consecutive weeks with distilled water; at doses of 100 and 200 mg/kg body weight of Néré Soumbala and Soyabean Soumbala ; 4 and 8 mg/kg body weight of industrial broth (A) and industrial broth (B). At the end of the eight (8) weeks of treatment, the mice were sacrificed and the blood collected for biochemical analysis. Kidneys and liver were removed, weighed and the homogenates were used to analyse some parameters of oxidative stress. Kidneys and liver were kept in 70% alcohol to assess the presence of any histological alterations. Industrial broths (A) and (B) at doses of 8 mg/kg body weight caused a highly significant decrease (p<0.01) in kidney and liver weights, respectively with marked histopathological changes in the liver and kidney. In the case of Néré Soumbala; it induced a significant reduction (p<0.05) in aspartate aminotransferase (ASAT) levels, a significant increase (p<0.05) in catalase activity and a highly significant increase (p<0.01) in SOD activity in the liver. The results obtained suggest that Néré Soumbala has antioxidant potential. In addition, the broths (A) and (B) at doses of 8 mg/kg body weight caused a highly significant decrease (p<0.01) in kidney and liver weights, respectively with marked histopathological changes in the liver and kidney. In addition, the Keywords: Industrial broths, traditional (Soumbala) broths, oxidative stress, NMRI mouse.
