Abstract

CHITOSAN-TRIPOLYPHOSPHATE-BARK EXTRACT ENCAPSULATION CINNAMON (CINNAMOMUM BURMANII) AND ITS ACTIVITY AS ANTIBACTERIAL

ABSTRACT

Cinnamon Bark (Cinnamomum burmanii) has the potential as an antibacterial agent because it contains active compounds cinnamaldehyde, coumarin, and eugenol. The direct use of cinnamon bark extract is often ineffective due to problems with its stability and bioavailability. This study developed the encapsulation of chitosan-tripolyphosphate composite with cinnamon bark extract and evaluated its antibacterial activity against Escherichia coli and Staphylococcus aureus. The encapsulation process was carried out using the ionic gelation method, then characterization usingFourier Transform Infra-Red (FTIR) spectrophotometer, Scanning Electron Microscope–Energy Dispersive X-Ray (SEM-EDX), and Particle Size Analyzer (PSA). Antibacterial activity was tested using the well diffusion method. The results showed a particle size of 1306 nm, a zeta potential of +8.56 mV, and a polydispersity index of 0.5165. Encapsulation significantly increased antibacterial activity, with inhibition zones for Escherichia coli (20 mm) and Staphylococcus aureus (23 mm) at the highestconcentration, indicating its potential as an antibacterial agent.
