ABSTRACT Polyherbal chocolates represent an innovative approach to combining the pleasurable experience of chocolate with the therapeutic properties of various herbal ingredients. The development of these chocolates is driven by the growing demand for functional foods that offer not only nutritional value but also health benefits. This review paper explores the potential advantages of incorporating herbal ingredients into chocolate, the mechanisms through which these ingredients exert their effects, the types of herbs commonly used, and the challenges faced in the formulation of polyherbal chocolates.
