DETERMINATION OF POTASSIUM IONS CONCENTRATION AND ANTIOXIDANT ACTIVITY IN SOME SELECTED FRUITS SAMPLES

ABSTRACT Potassium is vital for the optimal functioning of all cells, tissues, and organs in the human body. It is essential for cardiac function and significantly contributes to skeletal and smooth muscle contraction, hence being vital for regular digestive and muscular operations. It is the principal cation within animal cells and is therefore crucial for sustaining fluid and electrolyte equilibrium in the body. Potassium catalyzes several enzymes essential for plant development. The primary aims of this investigation are to ascertain the potassium concentrations in various fruit samples using the flame photometric method and to evaluate their antioxidant qualities via in vitro methods. The findings demonstrate that fruits are abundant in potassium, classified into high, moderate, and low potassium content categories. The fruit samples exhibited significant antioxidant activity.
