Sagar Dattatray Magar, Prasad Shivaji Thorat* and Divya Shankar Tambe

ABSTRACT

This research investigates the development and characterization of a natural aqueous suspension incorporating coriander powder, dry coconut powder, and optional honey, aimed at offering potential health benefits and culinary applications. The formulation is stabilized with 0.5% sodium benzoate as a preservative and 0.1% citric acid to regulate pH and improve shelf life. Distilled water is used as the base medium to ensure purity and compatibility with the active ingredients. The addition of honey not only contributes antimicrobial properties but also imparts a mild sweetness, enhancing the overall sensory profile. The preparation process focuses on achieving a uniform dispersion of the powdered components in the aqueous solution, with particular care taken to preserve the integrity of the bioactive compounds. Analytical techniques, including pH measurement and microbial load testing, were employed to evaluate the formulation's stability and safety during a defined storage period. Sensory evaluation was also carried out to assess consumer acceptability, especially with the incorporation of honey. This novel formulation leverages the well-established antioxidant, antimicrobial, and nutritional benefits of coriander and dry coconut powders, creating a synergistic effect that supports health promotion. By selecting natural ingredients and minimizing the use of synthetic additives, the formulation positions itself as a promising candidate for the food and health industries, emphasizing sustainability. Future studies may explore its functional properties, such as antioxidant activity, and investigate its potential uses in beverages, condiments, and health supplements. This formulation offers a model for the integration of natural bioactive compounds into everyday products, responding to the growing consumer demand for natural, preservative-free alternatives.
