FOOD PRESERVATION TECHNIQUES OF SOME FOODS IN TRIPOLI, LIBYA

ABSTRACT Feeding is necessity for any living being, providing a basis for good mental and physical development through its vital functions. At first, humans lived by hunting and gathering fruits and vegetables that grew wild. With evolution, they became sedentary and began to cultivate crops and keep animals in captivity to meet their feeding needs. Except in areas where conditions for natural preservation existed freezing and drying, food was spoiled by unknown causes in those early times. In the course of their development and evolution, humans tried to have access to food and to keep it without spoiling and with optimum quality, which led to the need to preserve it for later consumption. In this article, concepts related to food preservation are addressed and abrief description of some of the most important traditional and new emerging technologies is given.
