STUDY OF THE CHEMICAL-QUANTUM INTERACTIONS OF THE SODIUM CYCLAMATE AND THE AMINO ACIDS OF THE HUMAN BODY

ABSTRACT Artificial sweeteners have been studied for many decades. Sodium cyclamate (SCM) is one of them. We study the effect of quantum-chemical interactions between SCM and protein amino acids (AAs) in silico. We use the electron transfer coefficient theory in the Hyperchem quantum simulator. As a result, and conclusion, we obtained, in the most probable interactions, that the SCM is a potent antioxidant of the AAs and proteins.
