Abstract

REVIEW ON PHYTOCHEMICAL AND PHARMACOLOGICAL SCREENING OF FERMENTED BLACK RICE WATER

ABSTRACT

Rice (Oryza sativa L.) is one of the most economically and nutritionally important cereal crops worldwide. More than 200,000 varieties have been cultivated, and it remains the primary staple food for populations in many Asian countries. Black rice (commonly known as karuppu kavuni arisi, nalla biyyam, kappu akki). Accordingly, the present study aimed to investigate the phytochemical profile and pharmacological potential of traditional pigmented rice varieties, including black kavuni rice, with particular emphasis on evaluating their invitro cytotoxic activity against the liver cancer (Hep G2) cell line by using MTT assay.
